christmas repeat with gramma and papa

144

the morning (late morning) after our 2:30am arrival, we had a ‘christmas morning’ repeat with dave’s parents and gramma. games, ornaments, stuffed friends, clothes, and books were opened and enjoyed. 149160142154167157169 171 172

and then there is the famous singing reindeer hat! oh joy of joys! it lights up, sings “grandma got run over by a reindeer” and the antlers move back and forth!180 183

it’s always so much fun to get to celebrate multiple times with different people. I love dragging out the season!

beef stew recipe

another taken from the betty crocker cookbook, but i mess with this one so refer to the disclaimer … 1 tbsp olive oil 1 clove of garlic, pressed (or some good shakes of garlic powder) 1 lb. stew beef 3 cups of hot water (I probably use closer to 3.5 or 4) 1/2 tsp salt 1/8 tsp pepper 3 medium carrots, cut in thick coins 2 stalks celery, cut into 1/2 inch pieces 1-2 medium potatoes, cut into 1 inch pieces 1 small onion, chopped 1/4 tsp salt 1 bay leaf *optional: 1/2 bell pepper of your choice; 1 turnip; 1/2 tsp browning sauce (whatever that is) 1/2 cup cold water 2 tbsp all-purpose flour heat oil in large pot. cook beef and garlic in oil about 15 minutes, stirring occasionally, until beef is brown. add hot water, 1/2 tsp salt and the pepper. heat to boiling; reduce heat to low. cover and simmer 2 to 2 1/2 hours or until beef is almost tender. stir in remaining ingredients except cold water and flour. cover and simmer ...

banana bread recipe

thought i’d share my banana bread recipe on here. i made 4 loaves yesterday ( =1 full recipe) and remembered to take a picture. i love this recipe because it’s super easy to make, and it’s healthy, so i don’t mind the kids having a slice or two for breakfast or a snack throughout the day. micah actually had it for dinner last night, after he woke up from this accidental nap: he had been impatiently waiting to be able to eat some during the whole time it was baking and had a full-out, fall on the floor, hysterical fit when i wouldn’t slice them up the second the loaves were out of the oven. then he fell asleep. i got this recipe from my dad and i have no idea where he got it, so i can’t give appropriate credit where it is due. anyway, here’s the recipe (with my inevitable variations noted): 6 VERY ripe, mashed bananas 2 cups sugar (or less if you desire) 1 cup oil (or applesauce) 4 eggs 1 cup vanilla yogurt (or plain + a little vanilla extract and honey) 2 tsp. baking soda 2 tsp....

tater tot casserole recipe

i realized i forgot to post this last week when we had it.  i actually like it a little better than the hash brown one, but both are good.  it’s VERY similar. once again, this is something i’ve made so many times that i just kind of wing it now, although i do have the recipe that kate sent to me after she made it for my family when micah was born. i like to keep the recipe because it has some little ‘britishisms’ throughout, just like kate! ;-) who, by the way, rocks, having called to check up on me the other evening when she saw that the power in our area was out AGAIN!  thanks kate, smooch smooch! but now i’m getting distracted… big surprise. here goes. you will need: 1 lb or so ground beef (or ground turkey) 1 chopped onion a bunch of veggies (kate’s recipe calls for a ‘tin’ of mixed veggies, but i use fresh carrots & celery if i’ve got’em, frozen beans, peas, corn, whatever).  maybe 2-3 cups. 1 can (or tin) of cream of something soup (i...

chicken parmesan recipe

i’m not sure where my dad got this recipe… i think it was in a magazine or newspaper back in the early 70’s. no matter. i’ve always loved it, AND, big news, you don’t even have to refer to my recipe disclaimer on this one, because it’s so wonderful the way it is, that i actually FOLLOW the recipe! 6 chicken breasts 1 egg 1/4 cup water 1 cup fine dry bread crumbs 1/4 cup olive oil 3 8 oz. cans tomato sauce (Actually, I do deviate a bit here, because I buy my tomato sauce in 15 oz. cans, so I use 2 of those. It makes a little more sauce, but that’s okay because we like to serve this dish over pasta and more sauce is better than less) 1/2 tsp. dried basil 1/2 tsp. dried oregano 1/4 tsp. dried thyme 1/4 cup grated parmesan cheese 6 slices mozzarella cheese beat egg with water in a shallow dish. dip chicken in egg mixture and then coat with bread crumbs. in a large skillet, heat oil; add chicken and brown on both sides. mix tomato sauce, ...

hash brown casserole recipe

so mary asked about this, and since it’s a family favorite, i thought i’d post it.  there was, at one time, a recipe for this casserole, but i’ve made it so many times it’s kind of evolved (as these things tend to do).  so i’ll give you the recipe according to me… and if you like specifics and measuring things, then bummer for you!  so this is what i do: take a 9x13 pyrex dish and line the bottom w/ frozen hash brown patties.  i can usually fit about 7.  (you could also use a bag of the shredded kind, but it’s not as good.) add about 2 cups or so of veggies.  carrots, green beans, peas, celery – whatever you’ve got. (corn is not so good in this recipe, so i don’t recommend it.) you should pre-cook the veggies so they aren’t crunchy – or i guess you could use canned, but i think they’re gross so i use frozen, with the exception of the carrots and celery which are fresh. add a bunch of chopped, cooked chicken – whatever you’ve got leftover or ...
